Rfissa is a traditional Moroccan dish that is typically made with chicken and lentils, and served with a type of bread called msemen. Here's a recipe to make Rfissa:
Ingredients:
2 lbs chicken thighs or legs
2 cups lentils
2 onions, finely chopped
4 cloves garlic, minced
1 tsp ground ginger
1 tsp ground black pepper
1 tsp turmeric
1 tsp ras el hanout (Moroccan spice blend)
1/2 tsp salt
1/2 cup vegetable oil
10 cups water
1 bunch fresh cilantro, chopped
1 bunch fresh parsley, chopped
Msemen or flatbread
Instructions:
Rinse the lentils in a strainer and set aside.
In a large pot, heat the vegetable oil over medium heat.
Add the chopped onions and sauté until they become
translucent.
Add the minced garlic and spices to the pot, and stir to
combine.
Add the chicken to the pot, and cook for about 10 minutes,
turning the chicken occasionally until it is browned on all sides.
Pour in 10 cups of water, and add the lentils to the pot.
Bring to a boil, then reduce heat to low and let simmer for about 45 minutes to
1 hour, or until the lentils are cooked and the chicken is tender.
Remove the chicken from the pot, and shred the meat into
small pieces. Discard the skin and bones, and return the shredded meat to the
pot.
Add chopped cilantro and parsley to the pot, and stir to
combine.
Serve the rfissa in bowls with msemen or flatbread on the
side.
